The best way to eat meat for cholesterol patients
Some believe that red meat is bad for heart health from a large body of research showing that saturated fats can raise cholesterol levels.
Since red meat can be high in saturated fat, many people write it off right away as a bad idea for those trying to lower their cholesterol.Research was conducted on the BOLD diet (beef in an ideal lean diet), an eating pattern that includes vegetables, fruits, whole grains, legumes, and small amounts of lean beef.
Judson cited a specific study on the BOLD diet in which researchers looked at how different amounts of lean beef affected cholesterol levels in adults who already had “moderately high” levels.
Study participants experienced a 10% decrease in LDL cholesterol in two different diets of beef.
The BOLD diet contained 4 ounces of lean beef and the BOLD-PLUS diet contained 5.4 ounces of lean beef per day, with both diets providing less than 7% of calories from saturated fat.
“After five weeks, there was a significant reduction in total cholesterol and LDL cholesterol,” says Goodson.
The main takeaway from this study is that participants were able to eat red meat while keeping the saturated fat content low because they ate less fat cuts of beef and consumed a general diet lower in saturated fat.
